We started our snail breeding programme in 2014, and in the following year had our first successful outdoor breeding of the Helix aspersa maxima snail, resulting in the production of meat and livers. In 2016, we added interior breeding and caviar production. One great advantage of our breeding system is the clean outdoor environment in the Hostýnské vrchy foothills at 257 m above sea level. Combined with a quality feed mixture, this means our snail products—which we offer wholesale and retail—are of the highest quality.
One advantage of Helix aspersa maxima over other breeds is that they reach sexual maturity in only 6 months. They produce a high and good quality yield of caviar, have very tasty livers and adapt well to our climatic conditions.
II.
WHY SNAILS?
Snail flesh is a delicacy sought after by gourmets all over the world, for example, in French cuisine. The use of snails is also something of a tradition in our cuisine. During the First Republic, when there was an apparent French influence on many leading Czech hotels, snail dishes were not exceptional. These were, however, usually garden snails (Helix pomatia) of native provenance—meaning collected in nature.

RESULTING PRODUCTS
Its nutritional value means that snail flesh is highly sought after—and not only by athletes. It contains only 60 calories per 100 grams, high quality protein, no cholesterol, and is useful in diets because of its low fat content. Snail flesh also contains a high proportion of calcium beneficial to our joints, and its consumption has also demonstrated positive effects on people suffering cardiovascular problems.
The snails bred in indoor enclosures live under hygienic conditions at the correct temperature and humidity and in a bacteria-free environment. They are washed and fed daily. In the outdoor enclosures, they are additionally fed with a fresh feed mixture of French design and plants for primary growth.
