Sample Tasting Flow

Tasting Menu

  • Welcome drink: Frizzante Blanc, light bubbles to prepare the palate.
  • Fried snails in breadcrumbs with sesame.
  • 3 canapes with meat-liver cream, caviar with gold and snail liver. Pairing: semi-dry Pinot Gris.
  • Snail bouillon.
  • Ragout with snails, bacon, mushrooms, sun-dried tomatoes and basil. Pairing: semi-dry Riesling.
  • 6 variations of gratinated snails with parmesan filling and herb butter. Pairing: Dornfelder.
  • Side Dishes: onion baguette from our home oven.
  • Drinks: wines from the Oplustil family winery, or beer, non-alcoholic beer, espresso and a carafe of water with mint and lemon slices.
